Three main variants of Saint Nicholas of Myra Cider and one cyser, Ephphatha Cyser, have been made from blending pressings of more than 28 different apple varieties.  Almost all were North American or European heirlooms and/or cider apples.  Our cyser is made with organic* honey from our own bees, and our estate apples are also organically raised.  

The 3 main kinds of Saint Nicholas Cider are: Perpetua, Felicity and Tabitha.  Each has different amounts of tannins, sugars, tartness, and effervescence, with differing levels of clarity.  Each has a familially-related but discernibly different flavor.  The ABV for each is:  8.67%, 8.08%, and 9.72%, respectively. Perpetua has a strong flavor, is closest to an Asturian-style cider, is tannic, is most effervescent, has a strong apple aroma, and is the middling one for tannins.  It was made from 10 heirloom varieties of apples and 2 modern ones.  Felicity is the most tannic and clearest.  It was made mostly from 11 heirloom and 1 modern variety of apples, with tiny amounts from 13 or so additional heirlooms.  Tabitha has strong apple aromas and the second lightest golden color.  It was made from 19 heirloom and 1 modern variety, and comes in an effervescent and still version.  The still version is the easiest to compare to white wine and Tabitha's two versions also allow anyone interested to compare still and effervescent versions of the same cider. 

Ephphatha Cyser has 12.29% ABV, is very aromatic, with a clear, golden-orange or amber color.  (See general description of what we do for more information about this cyser.)

*  Organic honey is a problematic term since it depends on knowing where a honey bee forages for nectar and food and she may forage several miles from her home.  But it is true that honey bees are very efficient feeders and will always gather food closer to their colonies than further away, as long as there is good food near their homes.  We do our best to make sure, throughout our woodlands, orchards and elsewhere, that there is.
